Chocolate Coffee Coconut Truffles

No cooking required for this recipe! These little treats are lovely with a nice cup of tea or coffee if you can wait that long! This is another recipe you can be adventurous with – why not try your own combination of flavors? Or add some crushed nuts?

Ingredients

Dark chocolate

Coconut cream

Butter or shortening

Vanilla extract

Instant coffee

Salt

Coconut oil

Combine all of the filling ingredients in a saucepan. Including the chocolate (you'll use one bar for the filling and one bar for the coating), coconut cream, vegan butter, vanilla, instant coffee and salt.

Place the saucepan and melt the ingredients over low heat, stirring frequently. Once melted, remove from heat and place the mixture in fridge to chill for at least 45 minutes. The filling needs to be solid enough to roll into balls.

 

After chilling, roll the filling mixture into balls about 1 tablespoon in size. This is easiest to do with a small cookie scoop.Klik hier om een tekst te typen.

Place the balls on a lined baking sheet and freeze for at least 15 minutes to harden.Then, make the chocolate coating. Melt the dark chocolate and coconut oil in a small saucepan, over low heat.

Once fully melted, grab the fillings from the freezer and dip them in the melted chocolate.

 

After all of the coffee truffles have been dipped, drizzle any remaining chocolate over the truffles and top with a pinch of flaked sea salt.

Almond Butter Fudge Recipe

This delicious almond butter fudge recipe is not only healthy and keto-friendly, it's an easy no-bake dessert that you can whip up in 10 minutes and then store in the freezer.

Ingredients

1 cup Coconut Oil 

1 cup Almond Butter

¼ cup Whipping Cream  

10 drops Liquid Stevia

add pinch Sea Salt

 

Line a baking dish with parchment paper and set aside.

In medium bowl, whisk together coconut oil, almond butter, heavy cream, stevia and salt until very smooth.

Spoon mixture into baking dish and smooth top with spatula.

Place dish in refrigerator until fudge is firm, about 2 hr.

Cut into 36 pieces and store in airtight container in freezer up to 2 weeks.

Jello with Berries

Ingredients

1 cup Water  (divided, plus more for as needed in step 4)

1 kg Strawberries  

1 ½  Fruit Allulose Sweetener 

4 tablespoons Unflavored Gelatin Powder

Combine 120 ml  water and strawberries in a large saucepan. Bring to a boil, stirring and mashing as berries soften.Reduce heat to medium-low. Simmer for 8-10 minutes, until berries are fall-apart soft.

Reduce heat to low. Stir in the bloomed gelatin and heat, stirring, for about 2 minutes, until gelatin dissolves.

 

Meanwhile, pour 120 ml) water into a small bowl, mix the  gelatin powder and stir immediately before it sets. Set aside to rest for at least 5 minutes.

Line a pan with parchment paper,  hanging over the sides. Pour the strawberry liquid into the pan.

When the berries are very soft, pour the berry mixture over the sieve. Press with a spatula to push the juice into the bowl. 

Wipe down the saucepan and pour juice back into the saucepan over medium heat. Add Fruit Allulose Sweetener  and stir to dissolve. Taste and adjust sweetener to taste if needed.

Refrigerate for at least 4-6 hours, or overnight, until set.Remove the jello from the pan using the edges of the parchment paper. Slice into cubes

One of the more recent sweeteners to hit the market is Allulose It is believed to taste and feel like sugar, yet it has very few calories and carbohydrates. Furthermore, preliminary research indicates that it could provide certain health benefits.

Keto Mint Chip Pudding

Ingredients

Almond Milk ¾ cup
 

Vanilla Extract Imitation No Alcohol ¼ tsp

 

Peppermint Extract ¼ x 1/2 teaspoon

Chia Seeds 2 tablespoon, whole pieces

Dark Chocolate Chips, 60%-69% Cacao 3 gram

In a small bowl, add almond milk, ¼ teaspoon vanilla extract, 1/8 teaspoon peppermint extract, and chia seeds. Whisk to combine.

Cover the bowl with plastic wrap. Transfer to the fridge. Allow the chia pudding mixture to rest overnight or up to 12 hours in the refrigerator.

The chia seeds will swell up and absorb the liquid to form a pudding-like consistency.

After 12 hours, stir the chia pudding using a spoon. Portion out the pudding into serving bowls.

Top each chia pudding with a few extra mini chocolate chips and enjoy.

Chocolate Avocado Mousse

Ingredients

Avocados

Chocolate: unsweetened cocoa or cacao powder 

Coconut Cream

Spices:

Vanilla extract

Cinnamon,

Pinch of nutmeg 

Pinch of sea salt. 

Put all ingredients for your chocolate avocado pudding in a blender, until you have a really smooth mousse.

You don't need to add anything else - the mousse is perfect all on its own. But you can serve it with a few raspberries, a drizzle of peanut butter or whipped coconut cream.

Keto Cheesecake

Ingredients

Unsalted Butter

Filling

Cream cheese

Sour cream

Allulose Sweetener

Eggs

Make the Crust. 

Add your cookies to a food processor and break them down until a fine consistency remains.

Place the crushed cookies into a bowl and mix through the melted butter. Transfer the mixture to a 5cm spring-form cake pan and refrigerate it.

 

Make the Filling

Add the cream cheese, sour cream, and sugar substitute into a high-speed blender and pulse until smooth.

Add the eggs and vanilla, and blend once more until combined.

Bake for 50-55 minutes, or until the cheesecake has set in the middle.

Let the cheesecake cool completely before refrigerating it for at least four hours to firm up beautifully. 

The truth is that cookies can be enjoyed in moderation, but their health effects depend on the ingredients and portion size.

Coconut Macaroons

Ingredients

Egg whites  room temperature 

Granulated sweetener 

Shredded coconut flakes

In a large mixing bowl, beat the egg whites with the granulated sweetener until still peaks form.

Gently fold in the shredded coconut flakes, ensuring all the coconut is coated.

Using a large spoon, scoop out portions of the mixture onto a lined baking sheet.

Bake for 10-12 minutes, or until just set. Let cool at room temperature, before enjoying them. 

Almond macaroons Add 1/2 teaspoon almond extract to the mixture. 

Vanilla macaroons Add 1/2 teaspoon vanilla extract. 

Coffee macaroons Add 1/2 teaspoon coffee extract.

CinnamonSprinkle cinnamon into the mixture (1 teaspoon) and sprinkle with cinnamon sugar on top. 

Chocolate coveredDip the macaroons in melted sugar free chocolate.
